Made for hardcore pizza lovers, the Serious Eats Special Edition Kit begins with a traditional KettlePizza unit. For those unfamiliar with it, the insert takes homely, mediocre 22-1/2" kettle grills, such as Webers and Stoks, and magically transforms them into flashy, gourmet, pseudo-woodfired pizza ovens with a stainless steel sleeve that fits between the grill bottom and lid. The sleeve enables increased heat buildup and helps establish a cooking chamber capable of reaching and maintaining temperatures of over 750 degrees F. Either charcoal or hard wood heat sources can supply the grill's power. Throw in a pizza stone and homemade pies from the grill will taste of saucy, smoky, straight-from-a-sweaty-Brooklyn-hole-in-the-wall perfection in about 10 minutes.
